A giant New Mexico-style chili pepper, Big Jim peppers are famous for their size—sometimes growing over 12 inches long! They start out green and ripen to a vibrant red. Mild to medium heat (about 2,500–3,000 Scoville units) makes them perfect for roasting, stuffing, or making chili rellenos. Plants can grow 30–36 inches tall and begin fruiting about 75–85 days from transplant.
